Aloo gobi is a North Indian curry. You can make it as dry are gravy.

Process:

Boil the potatos till soften and peel the skin out of it and keep it aside.

Heat the oil and add mustards, slitted green chilles and jeera once seeds starts popping add chopped onions and fry till onion turns golden colour then add ginger & garlic paste, fry it for 2 sec.

Now add garam masala powder, coriander powder and turmeric powder, mix it thoroughly

Add potatos and mash it with spatula and mix it.Add 1/2 cup water and let it cook for 5 mins.(Don’t add too much water, just enough to cook the potatoes).

Now add cauliflower and mix it thoroughly,so that the florets are coated with the spices.Again, cook until the cauliflowers become soft.

Then add salt and red chille powder mix it and turn off the flame.

This recipe goes well with rotis.

Note:Dont over cook cauliflower to avoid pungent. If you want you may cook cauliflower separately in the microwave for 5 mins.
