Vangi Bath.



Ingredients:

1 Cup - Rice(cooked)
3 r 4 - purple brinjals(eggplant
1 Medium - Onion
1 Small - Tomato
Chilli powder
salt

For Masala:

1/2 Cup - Urad dal & Chana dal
1 Inch - cinamon
3 Cloves
2 Cardmom pods
Coconut- 4 Tbsp(grated)
Dry red chillies - 3 r 4
coriander seeds - 1 tsp
1/2 Tbsp - Mustards seed

For seasoning:

Oil - 2 Tbsp
Mustards - 1 Tbsp
Urad & Chana dal - 1 Tbsp each
Sesame seeds - 1 Tbsp
Cahewnuts - 5 r 6(split them)
1 Spring - Curry leaves
Hing - pinch


Method:

Wash and drain the brinjals.Then chopp them into long length wise pieces put it in water and keep it aside.

Heat oil in a frying pan,then add mustadrs,sesame seeds,Cashew nuts,red chilles,curry leaves hing and fry them till splutter.

Then add chopped onions and tomatos,till soften.Now add chopped brinjals,let it fry brinjals soften.



Add tuermeric powder,redchille powder,vangibath powder and salt,mix it throughly,now add quarter cup water and let it cook for couple of minutes.

Let it cool

Now take cooked rice into big bowl,add 2 tbsp jaggery then add the brinjal gravey to the rice,mix throughly.Thats all.................enjoy with onion raith are Tomato raith.

Note:Instead of mixing jaggery with the brijals,mix it with hot rice.It gives very good taste and smell.
