This is famous and traditional recipe of South Indians particulary Iyengars.My mom prepares this really delicious.
Ingredients:
Pumpkin - 1 1/2 Cup (peeled and cubed)
Tomato - 1 Small (Finely chopped)
Onions - 1 medium(Finely chopped)
Turmeric powder - 1/2 Tbsp
Jaggery - 2 tbsp ( Powdered)
Green chilles - 2
Red chilli powder
Salt
For seasoning:
Mustard seeds
Urad dal
Curry leaves - 1 Spring
Hing - Pinch
Oil - 2 tsp
Process:
Take oil in a frying pan and heat,once oil heats add mustards,urad & chana dal,hing and curry leaves.
once seeds start spluttering add chopped onions and chopped tomatos,let it cook till onions turns to golden colour.
Then add chopped green chilles,turmeric powder and chopped pumpkin cubes add 1/2 cup water,let it cook till soften on medium flame.
Now add powdered jaggery,red chilli powder and salt,stir it properly and let it cook just 2 to 3 mins without covering.Thats all..........
Its goes good with rice and roti.
