Vegetable Poha.



The other day one of my colleague Deepa brought vegetable poha for lunch,its really tasty.

I took the recipe from her and tried this week end,it turned out really tasty.

All we need......

Puffed rice - 1 1/2 Cup
Tomato - 1 Medium
Onion - 1 medium
Frozen Veggies - 1 Cup
Cabbage - 1/2 cup (Shredded)
Coconut - 1/4 Cup (grated Fresh / Frozen)
Green Chillies - 4 r 5
Cashew nuts - 4 r 5(Halved)
Turmeric - 1 Tbsp
Salt

For seasoning:

Urad dal - 1 Tbsp
Chana dal - 1 Tbsp
Mustards - 1 Tbsp
1 red chilli
Oil

Method:

Add enough water to the puffed rice and soak it for 5 mins,but don't over soak,your poha may become paste:-).

Heat oil in a pan ,once oil heats add urad,chana dal,red chilli,mustards.Once seeds start spluttering add Chopped onions,Let it fry till golden brown colour.

Now add chopped Tomato,green chillies,cashew nuts and all the frozen veggies along with shredded cabbage. Let it fry uncovered till veggies soften.

Then add required salt,1 Tbsp turmeric and grated coconut and finally add puffed rice.Mix it thoroughly and allow it to fry for couple of mints.

Thats it.........Enjoy with curd.
