Baingan Bharta




Brinjal is my all time favourite.We can prepare lot many varieties with brinjal.Northen Indians calls this recipe as Baingan Bharta,I will call it as Vankaya pulusu kura.

Ingredients:

Brinjals - 4 r 5( Small Brinjals)
Onion - 1 large
Roasted peanuts - 1/2 Cup
Tomatoes - 1 large (Finely chopped)



Green Chilles - 2 r 3 (Finely Chopped)
Ginger & Garlic paste - 1 Tbsp
Turmeric powder - 1/2 Tbsp
Coriander powder - 1 Tbsp
Red chille powder
Garam masala - 1/2 Tbsp
Ghee - 1 Tbsp
Oil - 2 Tbsp
salt
Mustards
Jeera
Cilentro

Method:

Chopp the brinjal into small cubes put it in tuemeric water and keep it aside.

Take ghee in a pan and add mustards,jeera once seeds starts spluttering add slitted green chilles.

Now add chopped onion and Tomatos,let it fry till onions turn golden colour and tomatos mushy.

Then add ginger & garlic paste,turmeric powder,coriander powder,garam masala,let it fry till it leaves spicy aroma.

Now add the chopped brinjals,let it cook till brinjals soften,Finally add peanut powder,red chille powder and salt,stir it thoroughly.Sprinkle chopped cilentro.Thats all.

Its goes good with rice are roti.
