Potato Kurma / Aloo Kurma



Poori with aloo kurma is all time faviourt and best combination.The preparation may vary form hand to hand.Let check my way of style.

potatoes - 3 r 4
Tomatoes - 2 medium
Green chillies - 2 r 3
Onion - 1 small(chopped)
Red chilli powder
Salt
corriander - for garnishing
oil - 3 or 4 tbsp




For Masala:

Small Onion - 1
Sesame Seeds - 2 Tbsp
Garam Masala - 1 Tbsp
Coriandar powder -1 Tbsp
Dry coconut - 1 Tbsp
Handful Fresh Cilentro

Add little water to all the above masala ingredients and blend it to smooth paste as shown in the below figure.



For Seasoning:

Mustard seeds - 1 tsp
Oil
Bay leaves - 2

Procedure:

Peel the skin of potatoes and cut into medium size cubes and cook it till tender.

Now heat oil in a frying pan,once oil heats add mustards and bay leaves when mustards start spluttering add the above masala paste and chopped onion,let it fry till onions turns to golden brown colour.

Then add chopped tomatos,let it cook till tomatos mushy.

Now add chopped green chillies,cooked potatos,red chilli powder and salt stir it properly.Use little water if the gravy is to thick.Let it cook for sometime.

Serve with poori's and Roti's.
