Brinjal sambar(Iyengar style)



The key ingredient behind good sambar is Sambar powder itself.If you can make sometime and prepare sambar powder fresh every time,it's really taste good.

The one I am presenting here is Iyengar style of sambar and sambar powder.

Ingredients:

Toor dal - 1 cup
Brinjals - 2 (chopped length wise)
Onion - 1 medium (finely chopped)
Tomato - 1 Medium(chopped)
Turmeric - 1/2 Tbsp
Red chilli powder
Jaggery - 1 Tbsp(powdered)
Tamarind pulp - 1/4 Cup
salt
Ghee r butter - 1 Tbsp

For Seasoning:

Mustards - 1 Tbsp
Oil - 2 Tbsp
Hing - Pinch
Fungreek seeds - 1/4 Tbsp
Urad & Chana dal - 1 Tbsp

For Sambar powder:

The below measurments will make you enough powder for 3 to 4 sambar preparations.



Urad dal and chana dal - 1/2 cup
Dhaniya - 1 cup
Frungreek - 1 Tbsp
Jeera - 1 Tbsp
Cloves - 3 r 4
Dry red chilles - 1/2 cup
Cinamomn - 1 inch

Dry roast the all above ingredients and blende it to smooth powder as shown in the above picture.

Method:

Pressure cook the Toor dal for 3 whistle,mash it and keep it aside.

Take oil in a pan,once oil heats add fungreek seeds and hing,always add first fungreek seeds and hing ,it gives very nice aroma to the sambar.

Then add mustards urad & chana dal and dry red chilles.once seeds starting popping add chopped onion.let it fry till golden colour then add chopped tomatos,let it fry till mushy.

Add chopped brinjals and let it cook till brinjals soften.

Now add the cooked toor dal and tamarind pulp,stir it well.Then add turmeric powder,Sambar powder,chille powder,jaggery and salt,mix it well and let it cook for 5mins.

Finally add 1 Tbsp ghee,thats all,Your sambar is ready.Enjoy your sambar with rice are rotis.

well said, sambar powder is the key to make good sambar! I use sambar poder in many ways, and my MIL n mom do a good job on making sambar powder. Thanks for sharing the sambar powder recipe. Will note it down.

Hi Annu,

The sambar looks fantastic. I can smell the aroma from the picture. I also prepare sambar powder fresh at home. But unlike you I make it ahead and store in a bottle for ready use (I am a little lazy to prepare it everytime I make sambar as we make it almost everyday..He he).
