It is typical Andhra classic recipe.....
Ingredients:
10 Brinjals(Egg plant, Vankayalu)
1 cup Roasted Ground nuts
1 Onion
Tomato medium size
3tbsp Grated coconut
Green chilles -2 r 3
oil
Salt to taste
Chilly powder
For Seasoning:
Mustard's
Jeera
Curry Leaves
First take roasted Ground nuts and put it in mixer and make Powder without adding water.
Now cut the brinjal length wise,it means make 4 from each Brinjal into turmeric water
Add oil in a pan,add mustards and jeers,once mustard's start spluttering add chopped onions,Tomato and splited green chilles,once onion turns to golden colour add brinjals,pour Quarter cup water,let it cook for 10 min,
Now sprinkle the Peanut powder,red chilli powder and salt.......garnish with Cilentro,goes good with Rice are Roti
