Guttivankaya -Type1

Gutti vankaya is Andhra classic recipe.Ingredients for stuffing changes from home to home,I can make 3 different types of Gutti vankaya,this is my favourite type,which i am posting now.



All we need is Fresh Brinjals,they should look shiny without any Brown spots on it
For stuffing:

Urad Dal - 1 cup
Chana Dal - 1 Cup
Peanuts - 1/2 Cup
Grated coconut - 1/2 Cup
Red chilles -8
Tamarind a little
Jaggery - 2 Tbsp (Grated)
Salt

Blend all the above ingredients and make fine powder without adding water and keep it aside.



Thoroughly wash the Brinjals.If you want, keep the stems. Take each Brinjal and make a plus shape slit towards stem.

Now stuff powder. Using your left hand fingers separate the quarters gently, push the stuffing inside with right hand fingers. Filling up all the brinjals,Do it patiently and slowly without breaking Brinjals.keep the residue powder aside



For frying we need half cup oil,Now in a deep bottomed pan add oil,once oil heats,gently place the stuffed brinjals into the oil,and close it with lid,let it cook for 15 min,on medium flame but don't over fry the Brinjals,Resulting in very wholesome fried Brinjals.Taste great with steamed rice with ghee on it.
