Tamarind Rice/Pulihora



Tamarind Pulihora,this is very familiar dish that every south Indian prepares on our festivals days.This is also called Chitranam.Its a tangy rice mixed in tamarind sauce and spices.It tastes great with plain yogurt. My mother is expert in preparing Pulihora.When i started learning cooking i never cooked any dish with measurement....so here is my way preparing Tamarind Rice,lets start

All we need is

Rice - 1 Cup

Ingredients for tamarind paste:


Roasted peanuts - 1/2 cup
Cashew nuts - 5 OR 6
Asafoetida - Pinch ( Hing,Inguva
Tamarind Pulp - 1 cup
Jaggery - 1Tbsp(Grated)
Red chillies - 4
Green chillies - 2
Turmeric powder - 1 Tbsp
salt



Ingredients for Tempering:


Mustard seeds - 1Tbsp
Urad dal - 1 tbsp
Toor Dal - 1 Tbsp
Curry leaves - 5 or 6

Method:

Wash the Rice and cook it.

Prepare tamarind Pulp by soaking the tamarind in 2 cups of water.

Now in a pan add Tbsp oil,once oil heats add mustards seed and turmeric,when mustards start spluttering pour this to the cooked rice,and mix it properly and keep it aside.



In the same pan add remaining oil,when oil heats add urad & chana dal,curry leaves,red chillies,splitted green chilles,Hing(without hing it is not at all pulihora),roasted peanuts and cashew nuts.let it fry for 2 mins,nowadd tamarind pulp along with tbsp jaggery and salt.Let it cook till the consistency becomes thick paste on medium flame. we can see upper layer is coated with oil.

Once the paste becomes little cool mix properly to the rice.That's all it is.



The Tamarind paste in the above procedure can be stored for days together and used as a ready-mix later.
