Avial / Fresh Veggies in Yogurt



'Avial' is a famous Keral recepi.This I learned when i am doing graduation from my Aunty...she is expert in makeing this.

Here is my way of preparation.(I did't used potato this time)


Ingredients:

For Paste:

Grated coconut - 1/2 Cup
Green chillies - 4 r 5
Jeera & Coriander seeds - 1 Tbsp

Blend all the above ingredients in to fine paste without adding water and keep it aside.



1 cup - Frozen veggies
1 Drumstick
Half Cucumber
1/2 Tbsp Turmeric
Salt
1 cup yogurt

Cut Drumstick and cook it separately similarly cut the cucumber length wise,keep it aside.

For seasoning:

Coconut oil - 1 Tbsp
Ghee - 1 Tbsp
Mustards - 1 Tbsp
Cilento

Procedure:

Firstly take coconut oil(For this recipe coconut oil takes a very important role so don't miss it)ghee into a pan and heat it,once oil heats add mustards,when mustards starting spluttering add all above veggies stir it once,add quarter cup water and sprinkle turmeric let it cook till all the veggies are tender.

Now add the above grinded paste and let it cook just 5 more Min's.

Then add the curd and mix it properly and take it out from flame(Once the curd added don't keep it on flame for longer time).Add freshly chopped cilentro.That's all.....serve hot with plain rice
