Karela Pulao / Kakarakaya Pulao



This is best and sweetest way to turn Karela from Bitterness.My Mother use to prepare this Rice atleast once are twice in a month.All wee need is

1 Cup - Rice
2 Medium - Karela
1 Medium - Onion
1/2 Cup - Jaggery
3 r 4 Green chilles
2 R 3 Red chilles
1/4 cup both - Peanuts & Cashew nuts
Curry leaves - Few
Cilentro
Turmeric
Mustards
Urad & Chana dal
Salt
Oil



Method:

Wash and cook the rice till 3 Whistle and keep it aside.

Now finely chopp the Karela to very tiny pieces to this add little salt and turmeric keep it aside for 10 min.

In a skillet take oil,once oils heats add mustards,urad & chana dal and redchilles,Once seeds starts spluttering add,chopped onions,slitted green chilles.Let it cook till onions turn golden brown.

Then squeeze the karela and add this to the frying onions.Add jaggery and 1/2 cup water,let it cook for 10 mins.We can clearly see the jaggery bubbles,then add salt and Cooked rice stir it thoroughly.Thats all very very simple,enjoy with any Ritha
