Brinjal curry/Vankaya kura



6 r 7 - Brinjals
1 Medium - Onion
1 Small - Tomato
4 r 5 - Red chilles

For Seasoning:

2 Tbsp - Oil
1 Tbsp of each - chana,urad dal

Method:

Chopp the brinjal length wise,put it in the tuermeric water(to avoid brinjal turning black)keep it aside.

Heat oil in a frying pan,once oil heats add mustards,chana & urad dal,when seeds starting spluttering add red chilles,chopped onions.Let it fry till onion turns golden colour.

Then add tomato and let it cook till become mushy,now add brinals,stir it throughly and let it fry of till brinjal cooked.finally add salt,stir it,thats all.Its goes good with rice are roti.
